AIC, Associazione Italiana Celiachia – The Italian Celiac Association
In 1979, parents of celiac children got together to learn more about the then-unknown disease and what a celiac-safe life would look like. Throughout the years, the Associazione Italiana Celiachia became the spokesperson for the celiac community.
The Italian Celiac Association spreads awareness, supports the best scientific research, and gives certifications to celiac-friendly establishments.
When traveling as a celiac in Italy, you will often come across AIC and its bright-red, square symbol. When you see an establishment is AIC certified, it means they have gone through a thorough examination and passed the AIC test.
These establishments are not necessarily 100% gluten-free but know exactly how to handle celiac food and have completely separate kitchens and tools.
Important Tip. If you see something – say something. Usually, AIC-certified restaurants will give you different color plates, or table covers, or even add a little flag to your dish confirming it’s gluten-free. If, for example, you’re supposed to receive your food with a flag on top and you don’t – tell them right away to ensure the food is safe.
